FORMATION

Formation is the process that goes into anything that comes into existence, and mixologist Vineet’s handshake celebrates just this. This experimental cocktail, which uses a yogurt fat-wash, recently won a nation-wide competition for its graceful taste and texture.

Barrel-Aged Sazerac - House Blended Ardmore, Absinthe, Sugar, Peychaud’s Bitters

Rumour has it that the word cocktail actually comes from the “Le Coquetier” or Egg Cup, which Antoine Peychaud originally used to serve a Sazerac.

THE WOKOU PARLAY

Miso-Washed Bacardi Orro, Unwashed Rum, White Sesame, Bitters, ‘Sugz’

This cocktail represents an imagined negotiation or ‘parlay’ between the dwarf Japanese Wokou pirates of the 14th century and their hostages. The parlay allows the captive to invoke temporary protection from the Wokou, hopefully a truce long enough to enjoy this tipple.
